Supper Food Kale and Blueberry Salad Recipe

 


Ingredients:

  • 4 cups kale, chopped
  • 1 cup blueberries
  • 1/2 cup quinoa, cooked
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup almonds, sliced
  • 1 avocado, diced

Dressing:

  • 3 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • 1 tsp honey
  • Salt and pepper to taste

Instructions:

  1. Massage Kale: Massage the kale with a bit of olive oil until tender.
  2. Combine Ingredients: In a large bowl, combine the kale, blueberries, quinoa, feta cheese, almonds, and avocado.
  3. Make Dressing: Whisk together olive oil, balsamic vinegar, honey, salt, and pepper.
  4. Toss and Serve: Pour the dressing over the salad and toss to combine.
  5. Serve immediately.
