Ingredients:
- 4 cups kale, chopped
- 1 cup blueberries
- 1/2 cup quinoa, cooked
- 1/4 cup feta cheese, crumbled
- 1/4 cup almonds, sliced
- 1 avocado, diced
Dressing:
- 3 tbsp olive oil
- 1 tbsp balsamic vinegar
- 1 tsp honey
- Salt and pepper to taste
Instructions:
- Massage Kale: Massage the kale with a bit of olive oil until tender.
- Combine Ingredients: In a large bowl, combine the kale, blueberries, quinoa, feta cheese, almonds, and avocado.
- Make Dressing: Whisk together olive oil, balsamic vinegar, honey, salt, and pepper.
- Toss and Serve: Pour the dressing over the salad and toss to combine.
