Ingredients:


For the Marinade:


12 chicken drumsticks

1/4 cup maple syrup

2 tablespoons balsamic vinegar

2 cloves garlic, minced

1 teaspoon Dijon mustard

1 teaspoon dried thyme

Salt and pepper to taste

For the Coating:


1 cup panko breadcrumbs

1/2 cup grated Parmesan cheese

1 teaspoon smoked paprika

1/2 teaspoon onion powder

Instructions:


In a bowl, whisk together the maple syrup, balsamic vinegar, minced garlic, Dijon mustard, dried thyme, salt, and pepper. Place the chicken drumsticks in a large zip-top bag or a shallow dish and pour the marinade over them. Seal the bag or cover the dish and refrigerate for at least 30 minutes, or preferably overnight, to allow the flavors to meld.

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

In a separate shallow dish, combine the panko breadcrumbs, grated Parmesan cheese, smoked paprika, and onion powder. Mix well.

Remove the drumsticks from the marinade, allowing any excess to drip off. Roll each drumstick in the breadcrumb mixture, pressing the coating onto the chicken to adhere.

Place the coated drumsticks on the prepared baking sheet. Lightly spray the tops of the drumsticks with cooking spray to help them brown and crisp up in the oven.
