Tasty Lemon Blueberry Cake Recipe

 


Ingredients

- 1 1/2 cups all-purpose flour

- 1 1/2 teaspoons baking powder

- 1/2 teaspoon salt

- 1/2 cup unsalted butter, softened

- 1 cup granulated sugar

- 2 large eggs

- 1/2 cup milk

- 1 teaspoon vanilla extract

- Zest of 1 lemon

- 1 1/2 cups fresh blueberries

 

Instructions:

1. Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.

2. In a medium bowl, whisk together flour, baking powder, and salt.

3. In another bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs, one at a time, then stir in the vanilla and lemon zest.

4. Gradually add the flour mixture, alternating with the milk. Gently fold in the blueberries.

5. Pour the batter into the prepared pan. Bake for 40-45 minutes or until a toothpick inserted into the center comes out clean.

6. Cool in the pan for 10 minutes, then remove from the pan and cool completely on a wire rack.
