Tasty Healthy Carrot Cake with Cream Cheese Frosting Recipe

 


Ingredients:

- 2 cups all-purpose flour

- 2 teaspoons baking powder

- 1 1/2 teaspoons baking soda

- 1 teaspoon salt

- 2 teaspoons ground cinnamon

- 1/2 teaspoon ground nutmeg

- 1 cup vegetable oil

- 1 1/2 cups granulated sugar

- 4 large eggs

- 2 teaspoons vanilla extract

- 3 cups grated carrots

- 1 cup chopped nuts (walnuts or pecans), optional

- 1/2 cup crushed pineapple, drained

- Cream cheese frosting (store-bought or homemade)

 

Instructions:

1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

2. In a large bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.

3. In another bowl, beat together oil, sugar, eggs, and vanilla extract until well combined.

4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

5. Fold in grated carrots, nuts (if using), and crushed pineapple.

6. Divide the batter evenly between the prepared pans. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.

7. Cool the cakes in the pans for 10 minutes, then remove from the pans and cool completely on a wire rack. Frost with cream cheese frosting.
