- 300 grams fresh spinach, washed and chopped
- 4 cloves garlic, thinly sliced

- 1 tablespoon soy sauce
- 1 teaspoon oyster sauce (optional)

- 1/2 teaspoon sugar

- 1-2 dried red chilies (optional, for a bit of heat)
Instructions:
1. Preparing the Spinach:
- Thoroughly wash and drain the spinach. Chop it roughly if the leaves are large.
2. Toasting the Sesame Seeds:
- Heat a small, dry skillet over medium heat.
- Add the sesame seeds and toast them for 2-3 minutes, stirring constantly, until they are golden brown and fragrant. Remove from heat and set aside.
3. Stir-Frying the Spinach:
- Heat a wok or large frying pan over medium-high heat.
- Add the sesame oil and let it heat up for a few seconds.
- Add the sliced garlic and dried red chilies (if using) to the pan. Stir-fry for about 1 minute until the garlic is fragrant and just starting to turn golden brown. Be careful not to burn the garlic.
- Add the chopped spinach to the pan. Stir-fry quickly to coat the spinach with the garlic and oil.
- The spinach will wilt down significantly.
- Add the soy sauce, oyster sauce (if using), rice vinegar or lemon juice, and sugar. Stir well to combine all the ingredients.
- Continue to stir-fry for another 2-3 minutes until the spinach is tender and fully cooked.
4. Finishing Touches:
- Taste and add salt if necessary. Remember that soy sauce is already salty, so adjust accordingly.
- Sprinkle the toasted sesame seeds over the spinach and give it a final toss.
5. Serving:
- Transfer the stir-fried spinach to a serving dish.
- Serve hot as a side dish with steamed rice, noodles, or as part of a larger Asian meal.

- For added flavor, you can include a small amount of finely chopped fresh ginger along with the garlic.
- To make the dish more substantial, add sliced mushrooms or bell peppers during the stir-frying process.
- If you prefer a spicier dish, increase the amount of dried red chilies or add a dash of chili oil.
