Ingredients:

 

1 lb large shrimp, peeled and deveined

1 can (13.5 oz) coconut milk

2 tablespoons red curry paste

1 tablespoon fish sauce

1 tablespoon brown sugar

1 red bell pepper, sliced

Fresh cilantro, chopped, for garnish

Cooked rice, for serving

Instructions:

 

In a pan, combine coconut milk, red curry paste, fish sauce, and brown sugar. Bring to a simmer over medium heat. Add shrimp and sliced red bell pepper, cook until shrimp are pink and cooked through. Serve over cooked rice, garnished with fresh cilantro.
