Tasty Quinoa and Black Bean Nuggets Recipe



Ingredients

- 1 can black beans, drained and rinsed

- 1 cup cooked quinoa

- 1/2 cup grated carrot

- 1/4 cup finely chopped onion

- 1 teaspoon cumin

- 1 teaspoon chili powder

- Salt and pepper to taste

- 1/2 cup breadcrumbs

- 1 egg, beaten

- Olive oil for baking

 

Instructions

1. In a food processor, combine black beans, quinoa, carrot, onion, cumin, chili powder, salt, and pepper. Pulse until well combined but not pureed.

2. Transfer the mixture to a bowl, add breadcrumbs and beaten egg. Mix until it forms a firm dough.

3. Shape the mixture into nuggets and place them on a baking sheet. Brush with olive oil.

4. Bake at 375°F (190°C) for 20-25 minutes or until crispy and golden brown.
