Ingredients
- 2 zucchinis, grated and excess moisture squeezed out
- 1 cup grated Parmesan cheese
- 1/2 cup breadcrumbs
- 1 teaspoon dried basil
- 1/2 teaspoon garlic powder
- 2 eggs, beaten
- Salt and pepper to taste
Instructions
1. In a bowl, combine grated zucchini, Parmesan cheese, breadcrumbs, basil, garlic powder, eggs, salt, and pepper.
2. Form the mixture into nugget shapes and place them on a baking sheet lined with parchment paper.
3. Bake at 375°F (190°C) for 20-25 minutes or until golden brown and crispy.
