Ingredients:
- 4 boneless chicken breasts
- 1 cup Greek yogurt
- 1 tbsp lemon zest
- 2 tbsp chopped fresh dill
- 2 tbsp chopped fresh parsley
- 2 cloves garlic, minced
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions:
- Preheat oven to 375°F (190°C).
- In a bowl, mix yogurt, lemon zest, dill, parsley, garlic, salt, and pepper.
- Cut a pocket in each chicken breast and stuff with the yogurt mixture.
- Secure with toothpicks if needed.
- Heat olive oil in a skillet over medium-high heat. Brown chicken breasts on both sides.
- Transfer chicken to a baking dish and bake for 20-25 minutes, until fully cooked.
- Serve with a side of steamed vegetables or a light salad.
