Ingredients:
- 1 lb lamb, cut into cubes
- 1 cup plain yogurt
- 2 tbsp oil
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1-inch piece ginger, grated
- 2 tbsp curry powder
- 1 tsp ground turmeric
- 1 tsp ground coriander
- 1 tsp cayenne pepper
- 1 can (14 oz) diced tomatoes
- Salt to taste
- Fresh cilantro for garnish
Instructions:
- In a large bowl, mix yogurt, curry powder, turmeric, coriander, and cayenne pepper.
- Add lamb to the yogurt mixture, coating well. Cover and refrigerate for at least 1 hour.
- Heat oil in a large pot over medium heat. Add onion, garlic, and ginger; sauté until fragrant.
- Add the marinated lamb and cook until browned on all sides.
- Stir in the diced tomatoes and bring to a simmer.
- Cover and cook on low heat for about 1 hour, until the lamb is tender.
- Season with salt and garnish with fresh cilantro. Serve with rice or naan.
