Ingredients:
- 1 cup Greek yogurt
- 1 cup cooked quinoa
- 1 cucumber, diced
- 1 bell pepper, diced
- 1/2 red onion, thinly sliced
- 1 cup cherry tomatoes, halved
- 1/4 cup crumbled feta cheese
- 2 tbsp olive oil
- 1 tbsp lemon juice
- Salt and pepper to taste
Instructions:
- In a bowl, mix olive oil, lemon juice, salt, and pepper.
- Toss cucumber, bell pepper, red onion, and cherry tomatoes in the dressing.
- In a serving bowl, layer quinoa, dressed vegetables, and Greek yogurt.
- Top with crumbled feta cheese.
