Super Tasty Greek Yogurt and Veggie Power Bowl Recipe

 


Ingredients:

  • 1 cup Greek yogurt
  • 1 cup cooked quinoa
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1/2 red onion, thinly sliced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup crumbled feta cheese
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • Salt and pepper to taste

Instructions:

  1. In a bowl, mix olive oil, lemon juice, salt, and pepper.
  2. Toss cucumber, bell pepper, red onion, and cherry tomatoes in the dressing.
  3. In a serving bowl, layer quinoa, dressed vegetables, and Greek yogurt.
  4. Top with crumbled feta cheese.
  5. Serve immediately.
