Tasty Instant homemade Coconut Pineapple Cake Recipe



Ingredients:

- 1 1/2 cups all-purpose flour

- 1 1/2 teaspoons baking powder

- 1/2 teaspoon baking soda

- 1/2 teaspoon salt

- 1/2 cup unsalted butter, softened

- 1 cup granulated sugar

- 2 large eggs

- 1 teaspoon vanilla extract

- 1 cup buttermilk

- 1/2 cup shredded coconut

- 1/2 cup crushed pineapple, drained

 

Instructions:

1. Preheat your oven to 350°F (175°C). Grease and flour a 9x9-inch baking pan.

2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt.

3. In another bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs, one at a time, then stir in the vanilla.

4. Gradually add the flour mixture, alternating with the buttermilk. Fold in the shredded coconut and crushed pineapple.

5. Pour the batter into the prepared pan. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.

6. Cool in the pan for 10 minutes, then remove from the pan and cool completely on a wire rack.
